    pleasure to make these ahead of time and bake after the roast came out of the oven.

    They were a big hit with all 8 dinner guests.

    This was amazing. I could only find sliced Pancetta at Whole Foods so I friend those up and it was such a savory crumble inside the potatos I had 3 helpings! I look forward to trying more of Giada's Italian twists on basic side dishes!

    My Mom and I decided to make all the same type of foods this Thanksgiving, but to use a new recipe for each of them .This has and will forever replace our usual mashed potatoes! It is cheesy, and crunchy with the panceta, and creamy! Giada, our hat is off to you! Easy enough to make we will use this recipe year round!

    Coming from a very rural area, pancetta is something I cannot buy around I did what others had said they had done and just used bacon. Not a lot of bacon either, 5 thin slices to be exact. I didn't add all the salt or all the butter (as called for in recipe because of the salt added to the water for boiling and because that sounded like too much butter. These were so salty and so oily, they were uneatable..Very disappointing to say the least.

    These are the tastiest mashed potatoes I have ever had. I halved the recipe as they were only 4 of us for Thanksgiving this year but wished I had made the full recipe since there are no leftovers. The pancetta adds something special from both a flavor and texture perspective. I was initially concerned about the quantity of cheese called for in the recipe but honestly they blended so beautifully there was none of the stringiness or oiliness I was concerned about. Also, as the recipe indicated, I was able to make the dish before my guests arrived and bake it off in the oven after I took the turkey out to rest. What a time saver!!!

    I loved the fact that this side dish could be made in avance and heated just before serving. I also loved the fact that I could have mashed potatoes as a side dish for the holidays without having to serve gravy. This one was great and I think the leftovers will be eaten instead of the cold starchy blob that I usually have to ditch in the trash because no one will eat plain mashed potatoes as leftovers!
