Best turkey I ever made. I love the brine because you do not need to refrigerate the turkey in the brine, I put my outside in the screen porch. The turkey was so moist. Thanks Alex for the BEST brine ever.

MMMM Buuutter. Wow... This is a great summertime Turkey too.I cooked a dinner for a marvelous old gal whose favorite food was Turkey. The only thing I changed was dark corn syrup for the honey. One grad student said "The heck with Grandma's turkey I'm coming here for Thanksgiving!" I really thought this was the most succulent moist delightful Turkey I've ever eaten.

OMG! Have made this twice now. While I have tweaked the recipe a little each time, have left the basics alone. It is, hands down, the BEST recipe I have ever had. All my friends RAVE about the flavor, the aroma, and just how darn GOOD this is. Thanks Alex for making me the envy of my friends at the holidays!

Absolutely wonderful! I hated making the turkey because my fear of undercooking the turkey always made it dry and tough. I also have a tendency to tweak recipes but I resisted on this and followed exactly. I'm glad I did, the turkey came out moist & delicious! YAY! I can now cook a turkey! The only thing I reduced was cooking time and went by a thermometer because I cooked a small turkey. If you are worried about the lemon zest butter, don't be, there is no lingering lemon taste. The only issue I have with this recipe is it not having suggestions to increase or decrease ingredients and cooking times for varying turkey sizes. For those who don't know 1 quart= 4 cups.

This brine made for one juicy turkey! I was worried that it would be too salty, but I was wrong. My family raved over this bird. I am now a BRINE BELIEVER.

Alex, thank you, thank you, thank you!!! I will never roast a turkey again without your brine!! The breast meat was sooooooooo tender, it was unbelievable! Wasn't salty at all(I think due to rinsing thoroughly before roasting, which Alex didn't do. Even the drippings were rich and delicious for making gravy! Highly recommend this recipe!

I gave it two stars cause there were areas that were good but over all the turkey was salty especially the dark meat...what did I do wrong? I measured everything carefully...made sure the salt was dissolved completely. It sat in the brine overnight. I smoked the turkey instead of roasting...did that make the difference?

Couldn't decide between this or Alton Brown's Good Eats Turkey, so I made both! They both turned out great, but everyone requested this recipe from now on. My mom used the drippings from both turkeys to make the gravy and it was fantastic!
