    Yum! I'm vegetarian so I cut out the bacon and added some smoky seasoning mix to give it that flavor. I also subbed the pepita seeds with pine nuts. Tasted great and I got great reviews!

    This was such a hit on Thanksgiving, very easy, flavorful, a great combination not sweet like some can be. We loved the texture and taste Thanks Ann for sharing it. Carolyn

    loved this!!! i did add some ginger to it to spice it up and i concur with the previous reviewer the bacon should be add back in at the end.

    This recipe was tasty!! Wasn't planning on it....but because of the taste....am planning on adding it to the Thanksgiving menu this year. The only notes I suggest is cook the bacon by itself on med. high heat til crisp...take it out and then add onions....then apples and scallions...then add bacon back in for the last 5 minutes. Also,,,to get this dish crispy....it takes more like 10 - 15 minutes and not 7 minutes.

    Really yummy, and super easy. Served this with Apple and Onion Sausage. This will become a go to recipe for me! Can't wait to make it for Thanksgiving.

    I made this sweet potato hash for lunch today with some Honey BBQ Seasoned pork loins off the grill. Is all I can say it WOW! Very beautiful presentation and scrumptious flavors! It was fabulous. I did change one thing to take some fat out. I used real bacon crumbles in place of the regular bacon and sauteed that in some olive oil. I followed the other directions as listed and it was SO GOOD! Topped it with the grilled pork loin and some fresh cucumber slices. Will definately make again!!

    While the flavor of this dish is excellent, the texture was a bit soft. When the onions were added, the bacon turned soft, and the sweet potatoes never crisped in the pan with the apples which went soft quickly as well. A crispy version of this would rock. Maybe cook everything separately and then combine at the end? Or cook in small batches with more bacon fat. I ended up topping this dish with a little parmesan cheese and browning it under the broiler which helped.
