Of all the complicated and expensive ingredient crostini I served this New Years Eve, this simple recipe was the one people raved about. My plum tomatoes were really fat so I probably roasted them for 3 hours. I doubled the recipe but could have doubled that! This is now one of my favorites and its amazingly inexpensive and easy to do. You could get fancy adding goat cheese to the crostini etc, but DON'T, the simple flavors are the stars of this one. Make it!

Simple and fabulous. I've made this 3 times and it has been a hit each time. Everyone really enjoyed it. Baking the crostini for 10 minutes made them a little too hard for my tastes. The second time I made it I baked the crostini for 7 minutes and it was still too hard. Third time I made it A baked the crostini for 5 minutes and it was perfect.

Awesome! I added some goat cheese and used thick slices of regular tomatoes. I served it with Rachel Ray's Christmas Pasta and my husband and granddaughter loved this dinner!

This is a really amazing, healthy and easy appetizer! My friends asked for the recipe. I sometimes put goat cheese on the top of the bread. You should try this!

This was great! I put some goat cheese on top as well, and it tasted a little better. the only thing is, that it's a lot of time, and not extremely hearty or satisfying. Good for a party, where you can just leave them in the oven and forget about it while taking care of the other cooking, but not worth it if you just want something to munch on at home.

I made these for a party recently and they were fantastic. I served them on homemade french baguettes and added a little more garlic. I also used roma tomatoes that were fairly big, so I cut them in thirds which worked well. I would definitely recommend these for any appetizer or party because of their simplicty and eye appeal.

This was so easy and fabulous. I also spread some sun-dried tomato goat cheese on the bread. The flavor just explodes in your mouth. This will become a standard recipe for me.

Served them at my Christmas Party and barely had a chance to try it myself! They were that good. Wish I made more.
