I did not use this meatloaf recipe, I used my dads that I love and grew up with and no other meatloaf comes close. I was so shocked it turned meatloaf into something so new..was not leftovers it was a newovers. Will break this out after every meatloaf :

This recipe is honestly better than the meatloaf recipe. I had a bunch of those mini meatloaves left over. The next day they were a lot better and a lot of the overpowering onion flavor had gone away. I used mexican style cheese and for the sour cream i used chipotle sauce! You could totally use chicken for this. I'm gonna be making this on a regular basis for lunches cos they are so easy!!!

I just made this recipe for lunch and we loved it! I replaced the meat loaf for a cooked chicken breast, used fat free sour cream (to cut the calories a bit, served it with pico de gallo and avocado and it was delicious! It was easy, quick to make, and very tasty!
