Tasty soup but the instructions could be better. Seems odd to add the milk before pureeing and then simmer for 10 minutes... I left the milk out but would add it after pureeing, if using. Same with the cheese. Also, I used 1 1/2 lbs cubed squash that I pre-cooked in the microwave for 6 min., and then added to the pot after sweating the other veggies. Made the assembly easier, in my opinion. Unless the squash is diced very small, it seems like it would take it much longer to cook than the other veggies, if added to the pot raw.
Try adding 1-2 tsp curry powder for an extra flavor kick. YUM!

I just made this soup today and thought it was awesome! My wife who had already eaten (she's in school and didn't have time to sit down for dinner said it was amazing. Also my five year old who is very picky loved it, can't ask for more than that! I didn't change much, but did change it a bit here's how:
1.I love garlic added 2 cloves
2. couldn't find apple cidar so I used the Simply Orange version of apple juice
3. Added thyme and basil as well as sage
I've had many different squash soups canned or form restaurants, but this was by far the best. I will without a doubt be making this soup again.

Super! I used sharp cheese- next time may add some garlic as well, but really a great soup! Will do again for sure!

good soup but a little bland. More sage and drizzle some good olive oil on top of each serving.

Delicious! I added 3 cloves of garlic, 2 more cups of stock (I used vegetable, more sage, and some rosemary and thyme. I also used cream in place of some of the milk. My guests loved it!

This soup was absolutely amazing!! Definitely a keeper. I added a splash of white wine to deglaze the pan as some others had suggested. Will be making this several times this winter.

this soup has a really nice blend of flavors. I followed the suggestion of another reviewer and added 2 cloves of garlic and a little red pepper flake to make it a bit more savory. I happend to have turnips so I used them instead of the potato. This is a wonderful soup on a cold night. I will absolutely be making this again.

Fantastic soup! I didn't bother with the apple cider, didn't use unsalted butter or low sodium broth, added a bit of minced ginger, used two red potatoes, less cheese. adjusted the sodium, added more pepper. Got rave reviews from friends and family!!
