My whole family loved this recipe! I used fried, crisp bacon to sprinkle on top of the soup instead of the prosciutto. This soup has such a unique taste and it makes you think you are eating a specialty soup from a fancy restaurant that would be sold as an appetizer. Simply amazing and very easy to make.

The soup was yummie but because I do not eat pork products, I used turkey bacon and it was still yummie. I peeled the veggies because that is what you should do and the recipe should show that.

My boyfriend and I really enjoyed this soup! The sweetness of the apple and the slightly oniony flavor really complimented the cheese, and the prosciutto's saltiness and slight chewiness were really great. I will say that this recipe took far longer for me to make than the article in the magazine suggested. And when they say you need a large pot - they're not kidding!

I had all the ingredients when I was looking at this and said "why not". It is really good.. and good enough for company... go for it.

Delicous and easy. I love the sweetness of the apple mixed with the saltiness of the prosciutto.

Hubby and I loved this soup! Very filling, but not heavy. I also used bacon and peeled my veggies. Top with fresh chives/scallions is delicious too! Trying to figure out what to do with the rest of my cider though...I welcome any suggestions!

I made this soup last night for my husband and friend. These two guys loved it! I substituted veggie broth and let them garnish the top of their bowls with prosciutto (I don't eat meat. The apple adds a wonderful flavor to it all.

I made this soup for my wife and she loved it! I substituted bacon (this is what was on hand and I did peel all my veggies. This soup made enough to give us lunch through the week, and it was just as yummy re-heated!

I made this for lunch one day and my husband and I loved it. It's filling and the proscuitto adds a nice special touch. Good enough to serve to company.

Very good. Used bacon rather than prosciutto because that's what I had. Leaving the peel on didn't cause any problems.
