I spent my life working and had little time to cook. I'm retired now and I'm enjoying cooking just not real sure of myself yet. I hate to ask a stupid question but how do you cut room temperature butter into pea size pieces? Mine just creamed all together. The cookies are in the oven now so I will soon see if it made a difference.

My children and I are working through the 12 days of cookies (albeit, not in 12 days!. We just made this cookie and all thought it was the best so far! I have made similar cookies in the past, but the addition of maple syrup was new and added a lot to the overall flavor. My only substitution was pecans for the walnuts. I was able to find tapioca flour in my dinky town (at the bulk foods store, but I wish I had known that cornstarch would substitute BEFORE I bought $3 worth. This is a keeper!

Hi, I just found this recipe yesterday and read all the reviews and wanted to make these cookies. Today by total accident I passed an Oriental Food Market and decided to stop. I went in, browsed, bought some fresh tofu and looked at these spring roll wrappers on sale just for fun. Anyway, guess what, the ingredients included Tapioca Starch. MMMMMMM I proceeded to the flour area, Rice flour, sweet potato flour, sweet potato starch and then Voila, Tapioca starch. Wrapped in clear and labeled plasic. Really nice packaging. I took it to the cashier. 88 cents. Whoa Nelli was I happy. Now I can try the cookies as written. So whoever said an Asian market may be the answer. Thank you.

Its like they cannot wait to say something nasty. No one else cares if you don't like a recipe. Keep it to yourself. I can tell immediately if I like a recipe. If I don't, then I look for another one. Why take the time just to say something nasty and risk misspelling words thus making yourself look even worse! Tis the season to be jolly. AND, I have no intention of making these cookies...I just wanted to put my two cents in!!

I agree you do not need tapioca flour & I definitely use almonds or pecans because my fiance is allergic to walnuts but all work well. The real secret is in rolling them in powder sugar right out of the oven if possible & then rolling them again. I have found it keeps them moister.

I'm in Fl. where almost Everything is hard to find but the near-by Health Food store does carry tapioca flour.
