I made half of a batch of these bites, and my husband and I were so impressed! I will definitely be making these for gifts at Christmas and throughout the year! My only tip is I had trouble keeping the bites together while dipping in the chocolate so I just drizzled it on with a spoon instead. Great recipe!

Honestly - 5 cups of powdered sugar per 2 cups of peanut butter?? If you were able to get past the actual making of these cookies (which, if you were, BRAVO .... these are filled with enough sugar to put someone into a diabetic coma! I really wish I had read the reviews before attempting these cookies. I consider myself a pretty good cook but these were an unqualified diaster. The peanut butter and powdered sugar mixture didn't even come close to resembling "smooth". I burned up the motor in my hand mixer trying to mix these things! Honestly --- don't even consider making these. They're a mess.

The food stylist did a fabulous job at making this cookie look so good. Did anyone on the staff of food network test this recipe as it was written? Did you leave some details out of this recipe? If they had...I think that they might have made some adjustments before it went out. This is extremely disappointing for the 12 days of cookies. I agree with everything that other have written. I think I might have done better with just putting some melted chocolate on one gram cracker...putting 1/2 a mash mellow on the another gram cracker...put it under the broiler until toasted...and put the two sides together. It's a great concept. Get the recipe testers on your staff to fix it so it works. I wish it had been reviewed before I was well into the mess. I am afraid that this recipe isn't a keeper...I think I'll file it in the fireplace. Food network....you can do better than this.
Intermediate cookie?...it might take an act of god to make this cookie work out like the photo.

Strike 1 = Effort and Time. Strike 2 = Messy. Strike 3 = Ugly. Strike 4 = Durability. Strike 5 = Taste. And you only need 3 strikes to be out. We made 6 other kinds of cookies today and only these beasties made us crazy. They made a terrible mess. They look like cat turds. And they sure don't taste like s'mores. They are so sweet they make my throat hurt. So luckily you're smarter than I, and have read the reviews before attempting these duds.

(If you must press on, we did make them more petite by rolling the sand-like dough between two sheets of wax paper and then cutting the coin shapes with a small shot glass.

Wow. This recipe sounded amazing. Unfortunately, it is way too time consuming, way too messy, and way too sweet. I wish there was video of Sunny making these cookies so I could see where I made my mistakes. I eventually gave up with half of the dough left.

I made these and they took me over 4 hours! Two of which were spent at the kitchen table making coin size halves for the cookies and then you still have to dip them. They are so rich you cant hardly stand to eat a whole one. The only thing good I can say is that they are pretty.

I was making these cookies for a cookie exchange and they turned out to be a disaster. A little more direction in the recipe certainly would have helped and I'm kind of disappointed that a recipe that was so poorly thought out was included in the 12 days of cookies. Based on earlier reviews, I tweaked the 'coin' recipe, which seemed to work out well and cut the sweetness. I used only 3.5 cups of powdered sugar and then a whole medium sized jar of crunchy peanut butter. This seemed to cut the sweetness and fix the consistency issue. When melting the chocolate, I actually added some vegetable oil to thin it out, per the instructions on the bag of chocolate chips for 'dipping' recipes. But that is as far as I got. I was able to dip about a dozen cookies, before I gave up. Despite thinning the chocolate, it was still really thick and the combination of the hot chocolate and the cold dough, really made teh dough warm up, so it was hard to work with. I scrapped this part way through and went to the store for new ingredients. I did finish a few with the marshmallow creme and would suggest just using a knife. Marshmallow creme + piping bag = terrible idea...just trust me.

If you can figure out how to execute these, bravo to you, but I would say the recipe would take some serious tweaking before I tried again.

Instead of doing individual coins roll the dough into snakes the diameter of a quarter and about ten inches long. Then chill for at least two hours. Then carefully slice the dough into 1/8 inch slices. (this method may not work with the rice krispies added After slicing into coins, butter the chocolate on with an offset spatula one side first then dip in crumbs do all first sides then do second sides. Chill again before putting together with marshmallow. Of course these are sweet they are s'mores! They are very messy and tedious to make but the are delicious and decadent!
Flavor rating excellent. Recipe method rating poor.
