Try adding a little chorizo with bacon. I use large white beans dried
I soak and cook them from Spain tinned are fine if you are in a hurry. In the North of Spain they would add some black pudding also.

Oh, the wonderful things that can be done with bacon fat!! I used pearl onions since I couldn't find cipollini onions anywhere, half expecting them to stay together, but two hours in the crock pot dissolved them to nothing. Next time, I'm just using a good sweet onion coarsely chopped. Serve this with a crusty bread to soak up that delicious gravy.
Another suggestion - double the carrots and add some parsnips in with the mirepoix to sweeten the stew and add even more depth to the flavor.
Amending several years later... this is a favorite of ours. We're now branching out and trying other meats. Got one cooking now with thighs and bratwurst. Pearl onions make a decent substitute too.

Tasty... I was expecting more though from all the prep work. Would I make it again ? Maybe. Would I make it for company ? No.

This is great, my husband was watching Guy cook this with me and decided he wanted some...he went and got the ingredients from the store and cooked it the first time. I am cooking it tonight, but forgot Chipolini onions...so I am using pearl onions and some regular onion. I am adding a few more spices...but I won't be putting it over rice!

I have noticed that many have tweaked this recipe. I encourage you to do three things, First try this recipe it is damn good as a wet winter day dinner. Second make it exactly as it says the first time paying special time to getting a great sear on the meat. Lastly forget the rice some people are adding; it already has beans in it but do get yourself a good crusty bakery bread.

I put in more celery, carrots and yellow onion than it asked for. Didn't add all the herbs mentioned but added yellow curry and some extra spicy Mrs. Dash seasoning. Had it over white rice. Delicious.

this had to be the best tasting dish by far.... I invited family over to be my testers and everyone ranted and raved. The prep and cooking time is well worth this hearty dish.....

Oh my! Everyone's going to think I'm a genius! I've got this cooking now for dinner tonight. Taste fabulous and it's not done! Just use what you have on hand to make it your own recipe. Like, I used some chicken tenders, some andouille sausage cut in to coins, some sweet italian sausage patties cut in cubes, and i'll add some shrimp to cook 5 min before serving over whole grain brown rice and some spinach. WOW! First recipe I've tried of Guys as I was having trouble connecting with him. But, I've got this down now! Thanks, Guy! Keep it up!
