I made this for my family tonight, to please my 18 yr old son who loves diners drive ins and dives show. It came out perfect. I used Tilapia filets, and grilled it like the show instead of baking it. I added red pepper flakes to the brushetta topping too , great flavor. I also cheated and used store bought marinara , it made the fish so flavorful! I love this show it is so much fun making new dishes.

This recipe was very delicious. I made it last week and doubled the recipe because I was serving 8 people. Everyone loved the Bruschetta. The marinara didn't cook down as much as I had hoped. The fish turned out wonderfully!
The proportions were not correct. It serves 4, but 4 restaurant style. Normally in eating at a restaurant you bring home leftovers. In our case we threw out half of the food because no one was willing to eat it for leftovers 3 days in a row. 4 of the fillets serve 8 normally with no leftovers.
Mel- I baked them and they turned out great. But I'm sure you can broil or grill it.

I just saw this show and the chef cooked the fish on a flat-top grill, not in the oven. Which is it?
