I made this for my family one night after seeing the show. I used smoked tasso instead of pancetta. I also added a little red pepper flakes to spice it up a bit. All I have to say is it was sooooo goooodd!!! My family loved it and my mother-in-law wanted the recipe.

I made this for Superbowl Sunday a few weeks back and people are still talking about it. IT came out really good- they only had a couple pkgs of Pancetta at the store that day when I went so I used smoked bacon instead(Crumbled it. Definitely recommend it, not your average mac and cheese.

Made this dish last weekend for our xmas gathering and had to report considering opinions came from ten others who were enjoying it as well. The Pancetta & 5 cheeses are what sold me in selecting this one. Everyone loved it and a few had said it rated as the best they've had so this one scored with all. It was very good!!
I also chopped up 3 garlic cloves to bake within the dish, added 1 tblsp. dijon mustard and topped with bread crumbs. This will definitely be our mac n cheese of choice.

Moving from Chicago to SC, I could not believe how many people love Mac N Cheese in the South. Neither my husband nor I ever have liked a mac n cheese .. until now that is. After watching this on DD&D's we decided to give it a try. Although rich and not healthy, it is fabulous. Would be a great side dish for a dinner party. The pancetta really makes this dish.
