An amazingly fast and easy dinner! I love the way the squash blended in with the rice to keep it on the burrito and not have the rice falling out at every bite. It also melded well with the other ingredients to make a unique and awesome taste. My only additions to this recipe was I felt it required a bit of onion, so I added some red onion to the bean salsa. I also changed out the pickled jalapeno for a fresh one and added lime juice to give it that bit of southwestern taste and add the acid to make this recipe pop.
Family loved it, even the one person who says he's only ever had beef and bean burritos, but he really liked the roasted chicken. When this one says he'd eat it again... it has to be Good!!!!

Don't quite understand the addition of the squash, it's much better without.

Why on earth would you put rice in a bean and chicken burrito? There's enough carbs with the tortilla. From the picture, there appears to be more rice as filler than beans and chicken.

Didn't like the squash addition. Doesn' belong in a true burrito.

I liked this a lot. I didn't use the squash because I didn't have any. The jalepenos give it a nice flavor.

That was the first time I did anything with butternut squash. I didn't have brown rice so, I used minute rice. Over all, this was a very good meal.
