    I make this recipe frequently with slight variations depending on what I have in my pantry. I think it tastes better with sourdough or rye/pump, but that's just a personal preference.

    I have eaten Tofu at restaurants but never cooked with it. I just by chance really loved the picture of this recipe and decided to try it. It was FREAKING awesome!!! I mean I was shocked and taken aback by how good the sandwich was. It was absolutely amazing. I am going to cook with Tofu more often. I HIGHLY, HIGHLY, HIGHLY recommend making this. It's just too good for words.

    Made the recipe exactly to specifications. Turned out DELICIOUS. My favorite part was the crispiness of the tofu combined with the sauteed spinach. So good - glad I found the recipe. My pescatarian husband LOVED it too.

    debbie6122....he was pointing out that the recipe was not vegetarian, not vegan....two different things. If you search for vegetarian recipes on this site, it comes up. Food Network should know better and should specify vegetarian parmesan cheese which is can be found. Very good recipes! I used fresh basil leaves instead of spinach since at first that is what I thought the spinach was.....very nice substitution. When I pan fry tofu like this, I put it between a towel, and put a plate on top of it, then a bowl filled with water to get it nice and dry.....crisps up really well that way.

    This recipe was so yummy! If you are on the fence about making it just try it -- the ingredients are pretty cheap and it's a super quick dinner. I used Italian bread crumbs to coat the tofu and was heavy handed on the parmesan cheese even adding some shredded, fresh parm on the sandwich at the end. I don't think the tofu was bland at all. As long as you remember to sprinkle a fair amount salt and pepper in the sauce and in the bredding mixture it came out wonderful. I would suggest thoroughly patting dry the tofu with some paper towels and pressing the paper towels into the tofu with your hands/ a book to remove all the excess water. It does wonders for the texture and taste.

    Very Very good. Instead of bread crumbs, I used saltine crumbs and just left out the salt in the breading mixture. Next time I would put the tofu under a plate or something, to get exess water out.

    I tought these were really good as is. I like havin easy tofu recipe. The husband tought the actual tofu was bland. I'll try marinating it or more seasoning next time to remedy that. A great base recipe.

    Even my dad, who never eats tofu, liked these! I thought they were super yummy. I took the top off the sandwich to save some calories.

    Awesome. My only complaint is that the breading slid right of the tofu as soon as it was in the sub. But I think that is tofu's fault, not the recipe's fault.
