I agree that the texture was more like potato soup. If we make this again, we will cut back on the nutmeg and probably won't puree as much. Definitely add the water.

this recipe tasted great, but the texture was more like a potato soup...very thick and not like panera's. i added more water than the recipe called for, and would do the same next time.

i just got finished making what was supposed to be comparable to Panera Bread broccoli cheddar soup ,now i have cooked for over 45 years, and i can follow a recipe, this soup tasted NOTHING like Panera's,and i am extremely disappointed in you for publishing it. HOW COULD YOU. IT WAS HORRIBLE!!!!!!!!!

I made this soup and it was awesome. I actually needed this soup faster than 40min so I puree the broccoli and carrots together and added them into the soup at the 15min mark. I then continued to cook for another 15miin slowly adding the cheese. My husband and bother loved it.

Soup was easy to make and turned out amazing. It was thick and really creamy. I did put the entire 3/4 cup of water in at the end to try and thin it out, but it was still really thick. I will absolutely make this again. I also skipped the bread bowl.

This soup is wonderfully creamy with a velvet texture. I served this soup without the bread bowl, but it was so delicious that I am making it again. Super filling, delicious and simple. A perfect copycat recipe that everyone will love. Thanks food network. This is my new favorite soup!!

I am so happy that Food Network decided to create a recipe for the Panera Bread Broccoli Cheddar-like soup! This recipe is fabulous! It needs quite a bit of salt at the end to bring out the soup's flavor since salt isn't really added throughout, except for a little at the beginning. My husband and I had this soup with some French bread on the side. This recipe is a bit time consuming but it's worth the time and effort!

This was really good. I cannot eat gluten so I modified the recipe slightly (used cornstarch as a thickener instead of flour. It made a very hearty soup.
