    Don't know why I bothered. Really Melissa? How many stay-at-home Mom's do you know that have time to drive to four different grocery stores (including Whole Foods and Trader Joes to find Smoked Paprika? I spent so much time shopping for this meal, that I didn't have enough time to prepare it for dinner! So, I wait until the next day and give it a whirl. I am so disappointed. I thought your recipes promised to be economical ($10 if I'm not mistken and easy for cooks to prepare. Couldn't be further from the truth! The anaheim chili's cost me $9 alone! Microwaved garlic? Please, guess you figure that will make up for all the time I spent shopping! Wrong. In the end, the flavor was uninteresting. The time it took to prepare was ridiculous! And what do I get for all my effort? My husband says, 'You already make wonderful chicken chili, why did you bother?' To make matters worse, he stands up from the table and pours it down the drain! Thanks a lot.

    Why didn't FN have a cook-off with chicken chili recipes rom Melissa and Aaron? Aaron's chicken chili, hands down, is more flavorful, and way-easier to prepare than Melissa's. Don't think the extra steps from Melissa result in a better chili. Don't do garlic in the microwave, per Christy's suggestion and add more beans. It nees more beans. I'd switch to cannellini beans like Aaron's though, didn't love the navy beans in this one. Prefer his peppers versus Melissa's spinach and Aaron's cheddar cheese over Melissa's Monterey Jack. Garlic + shallots resulted in an overbearing taste profile; too much for my family.

    I really loved the flavor of this chili. I followed the recipe exactly, and we really enjoyed it. It is a bit work work than the average chili or stew that I make (roasting the peppers, using the food processor for the garlic, etc, but when it was done, I thought it was well worth the effort and will make it again. I made the garlic in the microwave as indicated and it all turned out great!

    I have never tried to make white chili before, but this turned out nicely. Good flavor and easy to follow recipe. I roasted the garlic in the oven and used Cubanella peppers instead of the Anaheim Chili pepper because that was all my store carried. I also served it with honey cornbread. Will definitely make again.

    I bought the Jan 2010 magazine and found this recipe on a "He made, She made" contest. Melissa's secret weapon was the roasted garlic which she did in the microwave. I have never roasted garlic in the microwave, but decided to try it....
    Don't do it! The garlic did not come out to the consistency that I wanted. It was still too hard. Just go ahead and roast it the old fashioned way..in the oven. It will make this chili even better than it was.
    That being said, the chili still tasted great. The only other thing I changed was to add two cans of beans instead of one.
