    This recipe is great! As others have said, it's a basic recipe, as in a starting point. My goal was to clean out the freezer, so I used a mixture of frozen veggies I'd microwaved until more or less tender: mostly butternut squash and broccoli, but with a cup of "mixed vegetables" thrown in. I didn't use the potato, because I figured the squash was starchy enough. I used half of the butter, evaporated whole milk instead of the cream, and added a vegetable bouillon cube to deepen the flavor. Pureed it with my immersion blender. Quick and easy, and done in under a half an hour! Even my preschooler was willing to eat a few bites.

    I believe this recipe is what it's called a BASIC cream of Veg. Soup. It's a great starting point. The ratio is perfect. I combined this recipe with Contessa's Roasted Veg. Soup. Roasting the veggies adds so much more flavor. I've made this at least ten times and started adding low sodium bacon (regular or turkey for a more earthy flavor. Spinach is great mixed in as well. Great LOW SODIUM option :

    The recipe is decent as is, but it can be vastly improved with a teaspoon of salt, two or three cloves of garlic and a bay leaf before blending.

    I made cream of spinach soup w/this recipe. Absolutely delicious! The main ingredients are healthy and it's quite filling. I used skim milk to cut some of the calories. I highly recommend this dish!

    This recipe was certainly easy, but lacking taste. I didn't like the idea of the potato and steaming the vegetables didn't give the soup much flavor. I ended up adding alot of salt and cheese just to add flavor. I would make this again, but definitely make some adjustments.

    I made cream of broccoli soup and it was pretty simple and very delicious. I plan to make it again and again, and I'd serve this to guests.

    i love making this soup because it's so easy and so delicious. a really easy way to get people to eat their vegetables. if you omit the heavy cream it is great for vegans and people watching their weight.
