I thought it had great flavors. It was a little spicy but not over the top. It was great! It was easy but there was a lot of chopping involved.

The hardest part of tis recipe is the noodles. When they get slightly bendable take them out of the water. If you don't if will be gross and hard to deal with. This is a great recipe and can be altered to whatever vegetable you have in the garden. I add red peppers and omit the cauliflour becuase I never have in the fridge. You can freeze these in the summer time when yu have all you squash ans zucchini coming in and its a treat for winter. Nice and hot.

The noodle are very gummy. I think it would be better to boil them first or use instant lasagna noodles instead. Also, the red pepper is way too strong and covers the other flavors. The sauce and vegetables are good.

Lost my fav vege lasagna recipe and found this one. IT WAS AWESOME! The instructions should be edited to indicate that the sauce is made separately, not with the vegetables. Also, I a cut down on the red pepper, b cut down a little on the paprika, c cut back a tad on the onion, d did 3/4 cup cottage cheese and 3/4 cup ricotta. EXCELLENT! Very tasty; my husband had 2nd helpings!

As an inexperienced cook, this recipe was confusing. It didn't explain to place the butter and onions in a separate pan than the vegetables. I had to "skim out" the vegetables from the sauce. I'm sure it would've turned out better had I known. I think the recipe should be updated for those of us who are still learning. I love food network and have never had any issues in the past. I'm sure it'll still taste great.

We stuck to the recipe 100% and it tasted 500% better than expected. This is a great, great recipe. I would serve this to a favorite guest anyday. Left overs didn't hang around long!
