AWEMAZING Recipe! I LOVE LOVE LOVE this recipe. Easy and so DAMN good! Just wish it were easier to find Frisee. Been lucky so far and have changed it up a bit and used a fresh smoked hamsteak cut up instead of the bacon and it's just as awesome. If you can find Maple flavored bacon by Wright you'll love it even more. Thank you Claire for this AWEMAZING recipe!

Oh! This was so good and so easy! My "aha" moment came when a few weeks ago, I fell into bed after an exhausting day in the kitchen. I was cooking and cleaning from breakfast until dinner for my family. I'm a 37 year old mother of a 5 and 7 year old. It finally hit me that making complicated recipes just doesn't make sense anymore and that after 10 years of doing this, I deserve a break too. There's got to be an easier way. Anyhow, simple and delicious cooking is now my mainstay. Complicated meals are out for good! I also like Laura Calder on the Cooking Channel, whose recipes are impressive yet simple. And I cannot wait to buy Claire's new cookbook. Thank you Claire!

This is one yummy salad. I make lots of different types of salads for my vegetarian daughter and she loved this one (left off the bacon of course. She has asked me to make it several times. I never mind because it's super fast to put together and with the egg, it's a great way to get protein in her. I love it too. I have mine with bacon though. Claire, I love your shows and your easy recipes that are amazingly full of flavor!

I have to admit that when Claire first mentioned this, I thought that doesn't sound very good. Then, after watching her make it, I thought that looks pretty good. So, I went right out and bought the ingredients and made it. It was wonderful! Thank you Claire for such easy and tasty recipes!

OK, I haven't actually tried this yet, but I couldn't write here without giving it a rating. I did come to this site to get this recipe after seeing the show where Claire made this and it looked fabulous. Plus I love hot bacon dressing... (my mother's in law's german recipe is cook six pieces of bacon, crumble and set aside, but reserve the grease in the pan. In jar, beat 2 eggs, add 1/4 c. cider vinegar and 1/4 c sugar. Whisk or shake until mixed. Pour back into grease and cook until thickened. Pour warm over salad with bacon crumbles and onion. Wonderful, wonderful recipe

I am writing to answer another's question about poaching. I believe on the show she put the vinegar in the poaching water. This will keep the egg together during the poaching process and keep it from shedding pieces of egg white.

I love this!!! I did however fry the eggs mostly because I like the nice crispy edges better than I imagine I would like a poached one with soft sides. I need to learn to time the lettuce better as it started to more resemble cooked spinach after the first few minutes. Best eggs I have ever had. Oh did I mention I don't like eggs? =

i had never thought about heating lettuce. but i tell you that ws delicious. i ddin't have any chapmpagne vinegar so i used red wine vinegar. i didn't poach my egg I put it on the griddle over easy and put it on the salad. it was delicious! .i also used the shredded taco salad mix instead of what you used on the show. that was one of the best breakfasts i have had in a long time. by the way, it eas easy to make.
