    This recipe is delicious! Things I like best about it:

    1. Using lean ground beef in combination with quick oats causes little to no grease.
    2. The addition of carrots as well as mushrooms keeps the meatloaf moist and tender.
    3. It's adaptable to preferred tastes, i.e. I omit thyme but instead add more garlic and sometimes oregano or chili powder.

    Yum! I've made this recipe twice now and my husband and I have enjoyed it both times. We have not made the tangy sauce and it remains flavorful, juicy, and tender. I would definitely recommend this to anyone in the market for a meatloaf makeover!

    I love Ellie and wish there were more healthy chefs on Food Network! I made this recipe as my first meatloaf experience. Both my husband and I liked it. Followed the recipe and added 1 shredded zucchini and 1 teaspoon herbs of Provence (Italian spice blend. Would make again!
