Great recipe. I used raw sugar (approx. 1-1/2 tablespoon instead of 1 tablespoon, may try honey next time. I also added 1/2 tablespoon of ground cinnamon, 1 tablespoon of Disaronno Amaretto. Used 4 bananas. Worked out nicely.
May try 1 tsp of vanilla extract next time instead Amaretto - although, the Amaretto proved a tasty touch to the recipe. :

My grandma was an amazing country cook. Everything she made tasted like heaven - probably a bit of nostalgia talking. But I distinctly remember her pancakes being especially delicious. She's been gone nearly 20 years and I haven't been able to replicate her recipe until today. These are my grandma's pancakes. Unbelievable! Thank you Cathy!

These pancakes are awesome! I did not have buttermilk so I added 1 tablespoon of apple cider vinegar to 2% milk and let it sit for 20 minutes as someone recommended. They came out wonderful! Thanks for the suggestion!

Absolutely awesome! Since it's Christmas, I added a little eggnog to the batter. Had some blueberries and strawberries, reduced those into a syrup. These are delish and not heavy at all. I will never buy pancake mix again. I have searched a long time for a pancake recipe that I like. Store bought mix just never quite cut it. I can see myself as an old, white-haired grandma fixing these pancakes for my grandkids!!!!

I stumbled across this recipe. I have a large family of 5 that loves cakes. So I doubled this recipe. If you are one to playds around with ingredients and add to your personal taste this is a great foundation recipe. I found that I had to "tweak" the consistency of the batter, by adding a little bit of water. My family like thinner cakes. I also added a bit of agave nector(or sugar to taste and coconut extract(sometimes I will add lemon or almond. I tend to not like the baking soda/baking powder taste, so I made sure I just added a bit less, especially as I doubled this recipe!
The cakes were light, fluffy and delicious! Easy to make! A hit with the family!!!

This pancake recipe is the BOMB!!! It is so easy to make. I have two words for pancake mix: GOOD BYE!!! These pancakes are thin (a good thing light, and DELISH!!!

Nice texture, moist and fluffy as pancakes should be. I had to add extra milk, as i thought batter was too thick at first. And i took some advice and added a little vanilla too. Mine were with blueberrys, so any sweetness was missing the berries made up for it.

I followed one of the other rater's instructions and added the vanilla. I also added 1 1/2 tablespoons of butter instead of 3 tablespoons of butter. The recipe tasted great. I would like to add one additional recommendation. Usually when I make pancakes I do not flip them until the top of the batter begins to bubble. With these pancakes, I wouldn't let them bubble before I flip them. Instead, allow them to slightly/lightly brown on each side, this will cause them to be extremely light and fluffy. (vs. hard/brown and crispy. A few of my pancakes tasted very light and cake like and those were the best in the batch. Over all, great recipe that my husband also enjoyed.
