    I love eggs Benedict, and I love Mexican flavors. This was a match made in heaven for me! Loved everything about it. As for the reviewer who got sick and had to go to the doctor, that is probably because you used bad eggs. It doesn't have any reflection on the actual RECIPE that Marcela provided; Food Network even puts the raw egg warning in the recipe. It's a shame that a perfectly good recipe gets such a poor review due to one person's unfortunate experience with raw eggs. Either way, I loved it and would recommend it to anyone who wants a new spin on a classic dish!

    Every now and then, I like to indulge and my oh my, is this the perfect recipe to indulge with! Soooo good! Granted I felt like I should probably run 8 miles afterwords, but whatever. The hollandaise is so ridiculously easy. I'm terrible with poached eggs, but it's just as easy to use over easy or even scramble the egg whites not used by the hollandaise. I think I may experiment with making a bearnaise sauce with the same method.

    I've made hollandaise using this method for years, without the chipotle. It's a foolproof method, and I especially appreciate her tip for blending in a little warm water if it gets too thick. Also LOVE the added chipotle - it makes hollandaise more versatile - and let's face it, every now and then you need to forget about fat and cholesterol and what better way than to indulge in a little hollandaise. I was anxious to try her method for poached eggs - I'm a decent cook but have never been able to successfully execute a poached egg! This method also did not work for me. Has anyone else tried one that works? I don't want to give in to the molds!

    FABULOUS- Was easy to make, surprised daughter for mother's day and was a hit with all. Will be making this for many guests in the future.

    It was a synphony for the palate. PLEASE keep Marcela on the show her personality and style is refershing and real. Having lived in SD it is great to see her show coming from TJ.

    I loved this breakfast. The chipotles were a bit too spicy for my taste so next time I will use less. Substituted ham & did everything else the same. I hope they renew Marcella for a second season!

    Nothing like taking the hollandaise sauce up a few notches. Wow! My wife never liked eggs Benedict as she does now. I use this sauce on most veggies...Cauliflower, Asparagus, green beans, mix some mushrooms in. fantastico!! Thanks. So where are you...we miss you.

    I love eggs Benedict and this was such a great taste. The mock hollandaise was absoluteley delicious. My husband isn't a big fan of poached eggs, but the sauce made a difference. We ended up substituing canadian bacon and english muffins.
