I also doubled the recipe for a 2 layer 8" carrot cake. Of course, I tasted it before putting on the cake and now I'm waiting for my husband to get home to have a piece. Yummy.

Easy peasey...loved it.....
Made one batch and used half as is then added 1/4 cup baking coaco, and 1 teaspoon instant coffee with 1 tablespoon water blended.
Made some really delicious "Mocha" flavor.

It was good, but not cheesy enough. Need to have twice as much cream cheese as butter.

Very Good!!!!! I used it as sort of a glaze and while the cake was hot just poured it over a 13x9 in. and had some left over! Takes les than 10 min. too!

I doubled cream cheese amount *whole pack* turned out just right for my taste! If too sweet add lemon a bit of lemon juice to lighten it a bit!

Consistency is perfect! The batch the recipe yields is a bit small so I have been doubling it. And the first time the butter taste was to strong so I altered it like this.
8oz cream cheese
6oz butter (unsalted spreadable was the only kind we had
2tsp vanilla extract
3cups of powdered sugar (just because I forgot to add a 4th
and it turned out perfect!
