I made this dish tonight, exactly one pound of beef however I used sirloin ( for fajitas meat instead of skirt steak after talking to the butcher at Central Market. He said the skirt steak is more chewy and fajitas meat (sirloin is more tender. OMG, that butcher is right!!! My 18 months old baby enjoyed every bit of the steak we gave to her and wanted more. So yum!!!!! That caramelized onion sauce tasted so great with the steak and with buttermilk mashed potatoes we made. I wish I could show you a photo of my plate!!

This will not disappoint--absolutely fantastic! I never knew skirt steak didn't have to be marinated before cooking in order to be tender.

Fabulous! I didn't find skirt steak but found flank steak (which I think is very similar--2 lbs. for 6.50/lb. and I cooked it all, which made for lots of delicious leftovers. The only other change I made was using smoked paprika, which is what I had on hand. Would definitely make this for company. This is a keeper.

I don't usually review recipies, but this was awesome. Super easy and delicious. For those complaining about the price/lb of the skirt steak: Melissa advises in the episode that you gotta get it on sale! I paid over $10/lb (I live by the beach and it's summer right now. The onions take a long time to carmelize, but you could make them ahead of time and keep them in the fridge until you are ready to make the meal. It was so good though - the carmelized onions in that sauce is what made it really exceptional! I am going to stock up on skirt steak when it goes on sale - this will be in my regular menu rotation!

I agree with some of the other reviews about the meat not being enough for 4 people but that is a easy fix. But this is a great recipe and very flavorful. I did not use the wine but used beef broth in place of the wine. The only other item that I added was some mushrooms with the onions. Very tasty.

This was super easy to make and has so many layers of flavor! It's really delicious and tastes like a meal that a chef would serve in a resaraunt. My kids loved, it, my husband loved it, and I loved it! Nice one!

Great Recipe!!! BUT this will not feed a family of 4, there are 3 of us in my family and it was not enough!My fiance alone can eat 1 Lb of steak! And with that this steak is 6.99 a lb where i live. Really it depends on where you live, cause this recipe cost me around 20.00 to make!

Another great recipe from Melissa! I was concerned that such an inexpensive cut of steak would be tough, but it was absolutley perfect. I will definitely be making this one again! Thanks so much Melissa!
