This soup was creamy, full of flavor, and addictive. We are planning on serving it to neighbors who are skeptical of "healthy food."

Love this soup i make it without the topping to be simple for a week of lunches. It's very rich but delicious and easy!

I thought it was great for day one. It made me nervous to reheat yogurt based soup but that is likely just my ignorance. My husband didn't like it and didn't finish his bowl.
I think the yogurt and maybe the potato made it heavy for a side soup, but probably improved it if it is meant to be for a meal.
I'd try this again without the yogurt and potato.

My husband and I just didn't like this soup. I even used fresh carrots from our garden. The smell and consistency were not very appetizing. I am afraid it went down the garbage disposal.

My husband and I didn't like the flavor or the consistency of this soup. It looked like baby food, and the flavor was just off. The yogurt made it taste worse.

I used all fresh veggies from our local farmer's market. Excellent! I did double the amount of fresh ginger. I only salted to taste for each bowl (you can always add.... My wife had this when she had a trip the Azores over 20 years ago and said this was a great facsimile. This will stay in our winter soup recipe box!

We didn't care for the soup. For our family it didn't have enough flavor and the consistancy was like baby food (too thick. We think it had an overpowering carrot flavor and would have been better balanced with more potato and less carrot.

This was my first time making carrot soup, and I am totally diggin it. I omitted yogurt and pine nuts because I didn't have any, added extra ginger, and an extra potato and it turned out wonderfully! Would love to use the nuts next time to examine the effect. Previous reviews report that their soup was bland, but every cook has to hone their cooking intuition (especially with spices!!! so that recipes best fit their own taste. Try it out and experiment. Great stuff!!
