This soup is extremely bland. I followed the recipe exactly and I couldn’t taste the ginger, 1 tablespoon of ginger is definitely not enough. I also did not like the addition of the pine nuts. The nut flavor overpowers the carrots. The soup was expensive to make. It cost $5.99 for a 4oz bag of pine nuts. For a much better and more affordable recipe, I would recommend Emeril Lagasse’s Carrot Ginger Soup. His recipe calls for ¼ cup of ginger. It has a much richer flavor for half the cost.

This soup was amazing! Even my boyfriend loved it. The pine nuts added great flavor and I love that it used yogurt instead of heavy cream

I found this soup very bland. The proportions of garlic and ginger in the recipe appear to be half of what he used on TV. I added some garam masala to pump up the flavor and it helped to a degree. I reheated it today hoping it would have improved, but no luck there. This one isn't a keeper.

I made this for Christmas dinner and everyone loved it. The pine nuts compliment the carrots so well and add a great flavor. I made the soup the day before serving it and reheated it in a crock pot Christmas day. I added the yogurt and pine nuts before serving. It worked out very well and saved a lot of time on Christmas day. Definitely recommend this.

Super-cheap and easy. Also, even though it was all veggies it was very filling. I agree the pine nuts really top off the soup nicely.

This was very tasty and good. The pine nuts are a nice surprise. I would never think of putting it in this soup.

So Good and so simple. Thanks for the great recipe. The only changes I made were I left out the honey. Who needs sweetened soup? I also added about three tablespoons of goat cheese along with the plain yogurt. This really smoothed it out and gave it a great flavour. The goat cheese used was encrusted in black pepper. Try it!

Really great recipe! At first I wasn't sure about the yogurt but it really makes the difference, I like a bit more pepper though. Not a hard soup to make and the ginger did not over power the entire soup. You can always trust Guy Fieri for a good meal! Do try it out!

....with out it it the soup was good, but after blending in the yogurt mixture it was really good! I used a little bit more honey in the yogurt mixture. And definitely toast the pine nuts! I never would have thought to make a carrot soup. I looked in my fridge and saw this huge bag of carrots and figured I better find a way to use them. This was really great surprise!
