    This was absolutely delicious!! I chose not to add the lettuce and was great idea considering there was some left and it still tasted just as fresh for lunch the next day. Yummy!

    I have to give this recipe a 5 star based on the feedback at Christmas Dinner! In fact, I am looking at it now because my cousin requested the recipe! Just tweeking the dressing with a little bit of agave syrup to cut the vinegar was the only "adjustment" I made, otherwise, I followed the recipe.

    Living in the southwest, I can tell you this has captured all the flavors my area has to offer. I loved how the dressing had just a bit of zip to it. I did half the recipie, as others did, and served it as a side. We had plenty left over. I added a green onion to add another flavor to it. I could have also used a red onion for color, but did not have one on hand. I would definately make this again and again.

    This is delicious and easy to prep. I cut the recipe in half and still had plenty for 4. The dressing seems to be getting a lot of attention in the comments. I thought it was a little limey UNTIL I mixed it with the salad. It was terrific (though I may have added more hot sauce than the recipe called for. I will make this again and again!!! And I did. I made it last night for a party along with 4 other delicious salads. It was the most popular with many recipe requests.

    Easy. Fast. So good. I grabbed a cooked chicken from the deli and whipped everything together in 10 minutes. perfect for a hot summer day.

    After prepping the corn, avocado, onion, etc I was so disappointed with the lack of taste in the dressing. I made another batch adding much more hot sauce (10 shakes and even then the dressing was bland. What a disappointment.
