This is a quick recipe for a Friday evening when you want to go to a restaurant, but don't want to get in the car and go into town. You could even invite friends over and enjoy a great bottle of wine. Lovely and easy. Now for dessert!!!!

This is my go-to favorite recipe. I usually double it and make homemade bread. It is a real company pleaser.

I was looking for something different to do with chicken and I was glad that the ingredients for this recipe were all things I had in my kitchen cabinets. It was pretty easy and quick. I never use skin-on chicken, so that was the only change I made. I have to say though that it was very creamy,(mushy actually but it gets a little boring after a few bites. Also, it wasn't the most appetizing looking dish. I served it with rice since I had some already cooked. I figure the baguette might have been better though.
I think I will be making this again, but I'll probably add some red pepper flakes to spice it up, and maybe a touch more chicken stock.

I loved Melissa's cassoulet. It takes MUCH less time than the traditional recipe, and it still tasted delicious. I followed the recipe to the T for the first time, and the second time I reduced the amount of bacon her recipe calls for. I liked it better with less bacon in it.

I made this with the delicious lamb sausage from Ottomanelli's on Bleeker Street, and it was wonderful. Left out the bacon and used rosemary instead of thyme (as I was using lamb. I'll try it with chicken another time; I'm kind of 'chickened out.'

This recipe is genius! I sprinkled a touch of parmesan cheese on the chips just as they came out of the oven. Crisp, yummy, and healthy. Way to go, Melissa!

What a fabulous recipe!! I didn't have any bacon so I left it out. No need for all of that grease, the flavors were wonderful without it. My son claimed it was the best thing he had eaten at my house for a long time. That could be a comment on my cooking, but I give the recipe all of the credit. When the chicken was gone, I used the broth and beans as a soup the next day. This is a must try.
