This might not be the long, all day cooking version but,,, I made it for my picky husband and he loved it!
I used skinless, boneless breasts instead of thighs (husband hates dark meat and for a weeknight dinner it was wonderful.
Our big family monthly dinner is tonight,, 12 in all, and this is the dish I am making. This time I will use the thighs,, more cost effective.
The leftovers re-heat very well and were a great lunch the next day.

I made this with Buttermilk Cheddar Biscuits from Barefoot Contessa and the combonation was awesome.

This recipe was the easy & absolutely delicious. The only change I made was at the end. I sauteed Panko & seasoned it with salt, pepper & garlic powder. Melissa's show will definitely be on my dvr from now on.

I made this dish a couple nights ago and we all loved it. The small changes I made were: 1/2 # regular bacon, cut in pieces, and...boneless, skinless thighs as that was what was in the freezer. This might be the reason it was not greasy as some others have noted. The only thing I might do differently is add a bit of extra chicken stock than the 1/2 cup she calls for, as i didn't think this was very juicy.

I made this dish tonight after watching Melissa make it on her show yesterday. I followed the recipe exactly except I used turkey bacon instead of pork bacon (we don't eat pork. The best part was the tomato on top, there should have been way more tomatoes in this dish. Overall I thought it was just too plain. She described it as creamy, mine was no where near close. Mine was greasy and just too earthy tasting for me. Plus, it cost about $20 to buy all those ingredients, not $10. She over estimates what people have in their pantries. I hate that I have leftovers, I guess I'll take them to my dad and see if he likes it better than we did. Major letdown.

can you use a slow cooker? I don't have a dutch oven? Also, can you brown the chicken and vegtables with the slow cooker pot on the stove?

Hi Melissa, this was just great! Couldn't decide what to have for dinner, watched your show this p.m., and ran off to the store. Cost me about $11 for the ingredients. There was LOT of fat, but the layering of the tastes, the bake off at the last minute was to die for! Blew up the kitchen, but it was well worth it! Thanks for the great idea!
