    Amaziiiiiing! Cooked this today for my family and everyone LOVED it! Followed the recipe exactly, but i used 6 tortillas instead of 4 in each because 4 leaves a third of the pan exposed. And the recipe is not bland at all. The recipe clearly states to season the zucchini mixture and to season with salt and pepper between each layer

    After reading several reviews that described the recipe as bland, I decided to punch it up a bit on my first go-round. I increased the butter, olive oil, garlic and cajun seasoning (I used Zatarain's Creole Seasoning each by 50% and skipped the added water later in the recipe. I also added 1/4 teaspoon of crushed red pepper flakes to the garlic while it was heating. Leaving the extra water out essentially made this a fried rice dish (there's plenty of liquid in the tomatoes but it turned out great!

    Whoa. I thought this might be bland, just looking at the few ingredients listed. WRONG! Since I had everything on hand and the reviews said it was quick and easy I decided to give it a try. I even added diced green pepper to try to jazz it up a bit. NOT BLAND AT ALL!!! If you use a good cajun seasoning and the correct amount of garlic you should be just fine. My seasoning had enough kick for me, but if you like it HOT HOT HOT then serve with a good southern hot sauce. This one is a keeper.

    Wow, sorry to say I was disappointed in this one. My husband and I kind of thought it was bland. If I were to make again (which I probably would not I would definitely add some andouille sausage. This dish needs something more.

    Quick and easy! I think it could use an extra kick of spice and it only really needs 1 tbsp of olive oil and no butter. I would make it again, but use yellow rice (with saffron and throw in some other veggies like peppers, peas, and carrots.

    I really was disappointed in this especially after all the great reviews. It was watery and bland. I added some marscapone to thickin it but it still was nothing I would serve again.
