I was a little skeptical at first about this recipe, but it was a huge hit! I used the extra large elbow noodles. Also, I didn't layer the chicken mixture as the recipe states. Instead, I evenly blended the chicken with noodles.

Made this for Super Bowl and all ages loved it - it seems like a lot of hot sauce but with all of the mellow dairy products the heat aspect is tempered. To make it a little less rich I used lower fat half and half and sour cream, plus added an extra stalk of celery, swapped scallions for the onion for color and threw in a handful of small blanched broccoli florets to bump up the 'healthy' factor (thawed and drained frozen broccoli cuts would be great too. Even before the added broccoli the mixture made a TON, so much so that instead of fussing with layers I just tossed everything together and baked the 'overflow' in a separate 8x8 dish to freeze for a future meal. I subbed feta for the blue cheese, or you could easily serve it on the side for people to mix in to their taste.

I am originally from buffalo, ny. This recipe met my high standards for "buffalo" style recipes. It is also easy for me to put the blue cheese on only half....as many people are not fans of it. delicious either way!!!!

very good! Me and the hubby loved it.... But I'm going to try and save some calories next time using lowfat milk and fat free sour cream. I did add less hot sauce than the recipe called for, only because I have a 6 year old boy I didn't want to make a separate dish for. Also, I only had blue cheese dressing on hand, I mixed it into the bread crumb topping :

SO delicoius!!! So full of flavor and rich and creamy. I used 2% milk instead of half-and-half and the cheese sauce was still very thick and creamy. I even think 1% or skim would be fine too, considering all the cheese, butter and sour cream -- the sauce will still maintain a richness!
I was lazy so I only chopped/minced one clove of garlic, and it was still very flavorful! the chopped onion and celery added a nice flavor and crisp and fresh texture to the casserole, but they could be easliy ommited to cater to those who don't like them.
I used the amount of hot sauce that the recipe called for, and it was the perfect amount of spice/heat in my opinion. It could definitely be adjusted depending on your taste.
This makes a LOT of food -- one pound (1 box of pasta doesn't seem like much to me, but the chicken mixture adds lots of volume. Tons of leftovers.
The bread-crumb bleu cheese parlsey mixture was also fabulous. This recipe is OUTSTANDING and I highly recommend it!!!

Me and my boyfriend cooked this a while back and ABSOLUTELY loved it! Perfectly spicy, creamy and cheesy. It does make a lot and we had lunch out of it for a few days AND we were giving some away to friends. Might try to omit the celery next time and use skimmed milk, my boyfriend is lactose intolerant so it was a little rough on his stomach, but he just could not stop eating it! One of our friends just asked us to cook this this week so I will be making it again very soon!

Brought this to a potluck. I used fat free half & half and feta instead of blue cheese. Since it was a potluck and my husband hates blue cheese I thought I'd used an alternative that everyone would love. I thought it still tasted very rich and delicious. Everyone devoured it. I liked it but wasn't totally over the moon so next time I'm going to try it with blue cheese!

I have made this recipe a few times now and it is always a hit!! I stop by my gal pal's house the night before and pick up one of her baking dishes because this makes waaaaaay more than our household can consume! I followed the recipe with the exception of the hot sauce; I only used 4 oz in of hot sauce in the meat mixture and left out of the cheese sauce and it is plenty of heat for our taste. This is an absolutely delicious macaroni!!! Saute the celery long enough and it is a great part of the dish. Also, the Panko/blue cheese crumble on top MAKES the dish do NOT substitute any of it!!
