Tart flavor of the lemon was over powering the dish. Maybe using one lemon and adding butter is the trick to make it easier on the palate like others have mentioned.

Oh No! WAY too much lemon! I thought it might be too much, but followed the recipe anyway, and BOY I should have cut the lemon at LEAST in half. I see other reviewers stating that they cut the lemon and added butter, and I think that probably would have been a good idea. Should have followed my instinct instead of the recipe....

I made this last night and it was so good I thought I might die!! I didn't have that many mushrooms so I added in some carrots and onions. I halved the salt because I just had a feeling 1 tsp. would be plenty (t was. I also used only 1 lemon (both the zest and juice. Another idea I had was to pull it out half way through and spoon the fat over the veggies since they were just kind of "dry roasting" in there on top and not lookin' too good. This is definitely my new go-to chicken recipe!! Super easy, one pot meal and super tasty too!

Did my own thing with this recipe as I do with all my cooking but overall good recipe. Two lemons probably is a bit much though. I dusted with seasoned salt before I put in in the oven too, that added to the flavor for sure!

I'm sorry to say we were all pretty disappointed with this recipe, especially after reading all the rave reviews! I took the advice of many reviewers and only used one lemon and still found it overpoweringly tart. I would have enjoyed a much mellower flavor, but maybe lemon chicken just isn't my thing.

Love this recipe. I have made with broccoli and cubed butternut squash in lieu of mushrooms. both were great. I also cube the potatoes in relatively small pieces and don't precook. Cooking time is longer with larger chicken breasts giving the potatoes time to cook. Simple, one pan, and delicious.

So tastey!!! Strong lemon zing. I would definitely reccomend that you don't use a pan that is too big. I used a Dutch oven that fit 4 thighs tightly. And it was so moist. Also super easy.

Absolutely delicious and very simple. I didn't have enough fresh rosemary so I also mixed in some dried Herbes De Provence and it was awesome! I used my Lodge dutch oven (every kitchen should have one and the chicken was so moist and juicy. It did take a little longer to cook but did not dry out at all. We love mushrooms so I added some more and YUM we couldn't stop eating it!

You've got to try this. My boyfriend's favorite food. Be careful with cooking time though, sometimes larger chicken breasts require quite a bit more time, I've found.
