This dish is so delicious! I like to make the zucchini portion without the clams as just a side salad. To cut down on some of the calories, I cut the evoo down to 1 tbsp for the nuts and 2 tbsp for the zucchini.. I've only made it with the clams once, and mine took much longer than 10 minutes to open.. But all in all, a great, refreshing dish! Thanks Alex!

I made the zucchini dish alone for a party of thirty. i didn't have pine nuts so subsituted hazelnuts instead. It was a huge hit. The following day I made it with pine nuts and, once again, the crowd loved it. great recipe--to eat and look at.

I saw Alex make these on tv and was impressed with how easy the recipe was. I bought 24 littleneck clams and made them exactly as Alex advised. They came out so good that I will make them all summer! The lemon is important because it really adds a brightness to the dish. Be careful how much salt you add to the zucchini mixture since the clam juice from the clams adds its own saltyness to the mix.

The clams are a little hard to find in my neighborhood. I substituted mussels and put them on the cast iron grill. Next time I would use a pan with a lid. They turned out great. The zuchini, garlic, pine nuts and mint really get into the mussels. I used one and a half pounds of mussels for two.

I tried this recipe for family and it was very good and easy to make. It was a real hit. I loved how it was tastey without using bread crumbs.......very light. I would make this again.
