I made this for some friends at a dinner party. They loved it, and they've started asking me to make it again. It's not too difficult, and it's really good.

Way to go Ashley - YOU SAID IT !!! I LOVE MELISSA TOO AND THINK SHE IS A FANTASTIC COOK. I HAVE COPIED HER RECIPES AND JUST LOVE HER - I WAS SO GLAD SHE WON THE "NEXT FOOD NETWORK STAR"
TRY THAT CHICKEN IN MUSTARD OVER NOODLES - YUMMMMMMM !
I made all these recipes in the Seafood Grill - JUST LOVE MARCELA - living in San Antonio I can never get enough Mexican food and she makes it SO easy to prepare. I record ALL my shows to watch at my liesure - late at night when all I want to do is EAT THEIR FOOD!!!

I added a few jumbo shrimp with the scallops and avacados, delicious! Marcella is an excellent chef, we really enjoy her show!

I made this for our Soup Salad Sundays dinner group and it was a hit! I wasn't sure about carmelizing the avocados, but it added a nice texture change. Will made this again.

This marinade is excellent for scallops and shrimp! so easy to make... The caramelized avocados were great on this salad. LOVE THIS SALAD

I tried this with prawns and added 1 tbl of hot sauce to the marinade. Wow, it was really great - used it as a light dinner. Marcela really brings back fond memories of my childhood with her recipes - haven't been disappointed yet.

I just made this salad today, and it was so good! I changed the recipe slightly by not carmelizing the avocado, as I didn't want to add any sugar. I just used raw avocado. It worked, and the salad was great. I will definitely make this again.
