Easy to make, with great flavors. I used chicken thighs instead of breasts, cooked them in a pan instead of on the grill, and then added the juices from the pan to the soup to add a little more depth. Would definitely make again.

We made this for dinner the other night and were very underwhelmed. We ended up adding a lot of salt and pepper at the end and more croutons just to give it more flavor. I think the problem with this gazpacho is that you don't cook it and then let it cool, getting the most of the flavors from all the vegetables. Would not make this again.
