I have no idea who rates these recipes but I followed this one to the letter and it was the MOST bland rice I ever had, such a waste of time and money on a recipe that had ZERO flavor, and YES I am qualified to make this review!

My first time making Mexican Rice, and my friends and I loved it! I made it as a side dish to Marcela's chicken enchiladas with tomatillo sauce. What a fantastic dinner!

I made this tonight, & Loved it! I used seasoned salt, added cumin, I did not have Serrano chili but used a Jalapeno, I used roma tomatoes & chicken bullion cube & added corn & peas. The flavor in this rice is outstanding! Everyone loved it especially my almost 2 year old. I used it as a side dish for baked chicken flautas, It was perfect! nice fluffy rice, the Bay leaf gives it a great flavor. Awesome recipe! Just note that it may take longer than 20 minutes, for me it took closer to 35 & I needed to add about 3/4Cup of water after 20 minutes.

Delicious! I had to add a bit of extra water towards the end so that the rice could cook a bit more without burning. I also didn't include the serrano chile (just because I didn't have one and it was still delicious.

I did not include the bay leaf, serrano chile, or peas and it still came out very good. I was short on fresh tomatoes so I used a little bit of canned tomatoes which gave the liquid a darker red color. I was also short on broth so I used water and added tomato chicken bouillon. The main thing is to have 2 parts liquid to one part rice. The pureed tomato particles floated to the top so you may need to stir the cooking rice once before its done.

Great recipe. You can use vegetable base to make a vegetable broth for a meatless dish.
