Quick and easy. My two year old LOVED it. He was shoveling spoonfuls into his mouth! It was good to me, but I had to make modifications because of what I did/didnt have on hand. I used goya yellow rice mix because i didnt have medium grain white rice, so that made for an interesting dish. I also like that it has veggies built in so I didn't have to make a separate dish. Because I had to alter the liquid quantity to match the goya requirements, it was truly experiement. It didnt come out light and fluffy, but it still was tasty. I would like to see how it really is supposed to come out, so I will definitely do again, with goya or white rice either way!

I watched this show this morning & the mexican rice looked amazing! So I decided to make it as a side with fajitas for dinner this evening....WOW!!! This recipe is so yummy & so easy to make! I am especially excited how much it makes because I will be snacking on this for the rest of the week! Thank you Marcela for giving me a great new recipe to add to my collection!

This rice is amazing. My 12 year old son said it was "Awsome". This is the best spanish rice recipe I have tried. A lot of flavor and looks good in the bowl too. I will be making this one again and again.

This is not only delicious, it looks beautiful when you serve it. I too, served this at a dinner party and got rave reviews. I have never made mexican/spanish rice before and this was great This will be my new go to rice dish.

This was an excellent rice dish. I served it at a Mexican dinner party I had and everyone loved it. It's a very economical dish and makes a ton.

When you hear "Mexican Made Easy" you naturally think you are going to get either: 1- standard Mexican recipes we all know and love, simplified or 2- more obscure but authentic Mexican recipes--like Rick Bayless does.
Marcela, you are cute as a button, but if you don't start doing things like this instead of all those party foods, I think you can count on going the way of Aida M. We all loved her too, but the stuff she made was either weird or stuff anyone could think up by themselves with NO culinary know-how at all.
PLEASE do some of the recipes we all know and love! I'm still waiting for a Mexican cook who can do for Mexican what Aarti has already done for Indian in just a few months! Let it be you, Marcela!

i had try to make this rice before and no luck. but this recipe is the perfect one, my family enjoy this one a lot. i am very happy with it. it is foolproof
