    This is by far the best and most flavorful mexican rice I have ever eaten in Mexico or anywhere. This recipe makes me a 100% fan of Marcela Valladolid!

    I just made this rice today, and it was the best Mexican rice that I have ever cooked. However, it was very time consuming about 4 hours start to finish including clean up, I also made this with the grilled steak tacos and the tomato salsa/sauce that was also made on this show. But I did make a quite a few changes to the rice to suit my tastes and pantry items on hand. First, I sauteed the onion until translucent, then added my rice to the onions and sauteed for a minute or so before I added my liquids. For the liquids I blended whole canned tomatoes with fresh cilantro, Mrs. Dash spicy chipotle, and 2 chicken bouillon cubes and enough water to make 6 cups for 3 cups of rice. I omitted the peasm carrots, bay leaf, and garlic. I would say this is a very good starting recipe to add your own flavors to.

    This will be my "go to" recipe for mexican rice. I used an jalapeno pepper instead of the serrano that the recipe called for and it was delicious. It wasn't hot so next time I'll do a couple more. ( I pulled of the stem and de-seeded it before serving. Marianne Ward, Modesto, CA.

    I recently made this for family and friends and it was a huge hit! So moist and the flavor was delicious. I passed this recipe on and will definitely make this again!

    I really like this recipe. I used to travel to Mexico, Central & South America and eat versions of this all of the time.

    I love this recipe it was refreshing and not so oily as other recipes are..
    When i make this next im going to try whole tomatoes in the can ..we use the walmart brand to make salsa ..so im going to try that brand and see if will make a better flavor then the vine tomatoes...great recipe thank you made it very easy

    Only change i made was I chopped up the seranno pepper and mixed that in with the rice (after it cooked instead of adding the peas, It gave it a nice kick!

    Will use this one over & over again!!! Thanks for taking the mystery out of Mexican Rice!!! We used chopped green chiles vs the serano.
