I'm not going to lie I subbed a ton of different ingredients, but took some of the methodology and the basil sauce, was wonderful and my friends loved it. Thanks Giada, made for some great pictures on my blog!

I love these peppers and make them all the time! Substitutions I make: I use a flavored couscous (toasted pine nut and use only 1 tsp of the cumin. I change currants for dried cherries. I add pine nuts. And I use sour cream instead of creme fraiche because I can't get that in my area.

    Delicious!

I'm wondering if it would work to freeze them after stuffing them and bake them off later. If someone has tried that please write in!

I can't wait to make this again! I remember terrible versions of stuffed peppers from my childhood, but this is completely different and wonderful. I really enjoyed the flavors of the chickpeas and the currants in the filling.

I love it! Many modifications you make. I added mushrooms and chicken sausage and left out the beans. Very good!

These are so good. Like some other people said, I used plain greek yogurt instead of creme fraiche in the sauce and it was great. I've also made this with quinoa instead of couscous. I prefer the couscous because it ends up being a lot of quinoa to chew, but it's definitely an option.

This is a very good dish. I have made stuffed peppers before, but this is a good meatless recipe. The only changes I made was to add some oregano, basil and garlic. I covered the dish with foil halfway thru the cooking time, to prevent it from drying out and getting too brown. Will be using this recipe as one of my vegetarian dishes for my weekly menu.
