it was different at first because we're a meat eating family, but this vegetarian meal was a GREAT change!!...the basil sauce topped it off & set off all of the flavors....I will definitely make this recipe again & I even passed on the recipe to a friend :-

Yummy goodness! My first time eating couscous but who doesn't love pasta! The flavors all come together very well. I couldn't find creme fraiche at the store so I subbed with sour cream, when I do find some I am going to make these again. and again... excellent recipe.

This is great! Made a few changes though...

    replaced cumin with ground sage
    replaced currants with dried cranberries
replaced beans with browned ground turkey

replaced creme fraiche with 1 cup 1% milk and a rue to thicken to make sauce

Admittedly I did not technically eat the end result of this recipe, however, I did eat all of the components. I made this dish for a client of mine and tasted as I went along and LOVED the flavors. And the client was EXTREMELY impressed, loved it. The basil sauce could be eaten on cardboard and taste gourmet, so wonderful. For the record I used red & yellow peppers, light sour cream, low fat feta and craisins for the filling. Also had enough filling for 4 peppers.

This was wonderful the way the recipe reads, I did not change one thing. However, I only had enough stuffing for 4 peppers. A new favorite in our house. The sauce is what really sends it over the top, it's light and sooooo wonderful. Next time I will double the sauce recipe.

I made this for self described "non adventurous" company and they enjoyed it! What a beautiful dish, and filling. Also heated up so well the next day. My favorite was the orange bell pepper.

Delish!!! There is so much flavor in this simple recipe. My 11 year old said "this is outstanding mom". Love that! I used brown rice instead of couscous because I had it on hand, also used mascarpone and sour cream mixed because I didn't have creme fraiche. It seems to be a very forgiving recipe. Thanks Giada for making our weeknight dinners so tasty.
