I have always made the traditional stuffed peppers and received rave reviews, but this was a great change of pace. It was the perfect summer stuffed pepper! I added a little ground turkey, sauteed mushrooms and used craisins. The whole family loved it including my 2 year old!
The fresh basil sauce is so delicious, don't skip this part!!

So easy to make & healthy too, Giada rarley disappoints me & here is another example, made it exactly as the recipe except used sour cream instead of creme fraiche, could not find it in the grocery store, so good!

My daughter made this for me for mother's day and I loved it! We crushed the chickpeas and used craisins instead of currants. Served it with a nice green salad (using some of the leftover baby spinach leaves and a glass of white wine - it was FABULOUS! :

WOW. These peppers were SO delicious! I didn't even add anything, I stuck to Giadas recipe except I prefer brown rice to couscous so I used that and I substituted light sour cream for the creme fraiche. Served with grilled chicken and a salad. I will make this again and again!

added hamburger to the couscous mixture with al the other ingredients and also added sun-dried tomato to the sauce....
layered inside the pepper, couscous, a little bit of sauce, slice of provolone cheese and than the couscous mixture on top of that, let it bake, and at the last 2 minutes put another slice of provolone cheese to melt on top! DONE ! AWESOME!!

This recipe was fabulous... my friends went wild over it !!! I did add a few extra ingredients. I added the zest from one lemon, sun dried tomato sausage and toasted walnuts to the filling...I would make this again and again

First recipe from Giada that actually came out, and that I actually liked!

This is a tasty dish! Its also easy, and fool proof! (two MAJOR +'s in my book.

I added sautéed mushrooms to mine and it was fantastic!

The sauce is alittle powerful but all you need to do is back off a little on the basil. Other then that it is delicious and the consistency is perfect! I put this sauce on everything now. It's so good!

This was really good. I will definitely make it again. I split the cous cous in half and did a kid version with the chick peas, spinach, parmesan and dried cranberries. This way I had an adult version and a kid version. It went over well! Next time I plan on substituting the cranberries or currants with sundried tomatoes - this would help balance the sweetness of this dish.

Delicious! I made a few changes based on items I had on hand.
    - Instead of couscous I used quinoa but prepared it the same as the couscous instructions.
    - I used dried cranberries instead of currants.
    - And instead of the creme fraiche I used half sour cream, half 2% greek yogurt - I had to add a little more water and a little more sugar but it was great!
Finally, while ALL of the peppers were tasty, I actually preferred the yellow and orange ones - the red pepper flavor was just a little sweet.
