I made this the other day and the chicken is absolutely delicious. This entire recipie is exrtemeley east to make. This was actually my first time baking a whole chicken, and it came out very moist. The lime really does soak through and flavor it a lot. I rubbed a little bit of olive oil all over the chicken just to make sure it stays moist. The sauce with the Creme was also the first time I have ever used it. I didn't care for it that much, but my boyfriend really liked it. I would probably mix it with sour cream to add some tang. But overall, I was very impressed with the huge flavor the recipie has with so little ingradiants. I will for sure be making these tacos again! Next time I will try it with that grilled corn salad.

I didn't actually have chipotle peppers so I had to improvise with cayenne, but it was really good!
I used drumsticks rather than a whole chicken, but it was super tender and moist.
Gave it four stars since I didn't actually make the original recipe.

I love this recipe and it has become a staple in my house. Of course, I like a little spice in my recipes and this can pack a punch. I blend the chipotles in a smoothie blender to break it down even more as the heat can get intense if not in tiny bits! Just lessen the amount to cut back the heat or add more if you like flame! The lime is what really makes this recipe and adds a wonderful tang-but I'm a huge lime fan :- . I first found this reeipe in Claire's book and I have chipotle-lime cravings if I go too long without it! Adding lettuce and fresh onion is nice too.

All I could really taste was the limes, and I just found out after making this recipe that I don't like limes that much! Luckily we had the stuff on hand to turn this into a regular taco night, but with chicken! I used sour cream with milk added as someone else stated, and all I really tasted was sour cream with lime. I added 2 chipotle's and some sauce, and couldn't even taste it! I was a little sad, but it's ok!

This recipe is fantastic! I used a rotissorie chicken bought from the store to save time. You can find crema and queso fresco in the frigerated cheese area at most stores. Big hit with the kids..thanks Claire!

Very nice flavors when combined w/slaw. Can't find crema? Use sour cream (reg.or low fat with a touch of half & half or milk stirred in (I see Mexicans do it this way all the time. Don't like chipotles? Try Hernandez brand taquiera or rancho (canned salsa.

Azjune: crema is almost equivilant to a Mexican creme fraiche - almost like a sour cream, but not as tangy. BTW - this was quite good, but I did it with cut up chicken (got to shop the sales!!
