    I has been such a delight cooking your recipes. My husband loved veal cutlets, but we started feeling bad about eating veal. This is a nice alternative. I pounded them thin and they we tender.

    Wonderful recipe! Husband loved it. I used thin bone-in pork chops, no pounding necessary. I don't deep fry anything and using very little oil convinced me to try this using safflower oil. Definitely my favorite pork chop recipe.

    Made this for dinner last night. It was easy and delicious. I used Panko breading and the chops were crispy and moist. I picked up the pre-cut pork cutlets in the meat "markdown" section (the pull date was the next day and they were 50% off! There was 4 chops and weighed just over 1 pound. All for less than $3.00! Served with green beans and a pasta side dish. Probably less than $6.00 for everything. The chops were about 1/2 in thick so I browned them quickly and then turned down the heat so they would cook thru. Hubby really liked them too.

    Make sure you use the correct cut of pork and pound it out pretty thin, our pork was still undercooked in the middle. The bread-crust-crumb topping was delicious!
