I can't wait to try it! I love her! I will never understand why such sad, angry people get on here just to denigrate others. We don't CARE about it being authentic! That's NOT what this show is about. If I want chipotle mayo on my sandwich OR torta, why is that anybody else's business? This is a classic case of not having anything nice to say & needing to keep it to yourself! Thanks for all the positive comments. It doesn't ultimately matter if one likes the recipe or not...just that you posted an honest, POLITE & helpful comment.

I have a similar version of this about once a week in my hometown. Laredo. They're sold at HEB, our local grocery store, and at several restaurants who specialize in "corn in a cup" Most times there's a line of people buying these. In Laredo, they're made by scooping warm corn into a cup, adding a spoonful of mayonnaise, butter, and mexican crema on top, and then sprinkling plenty of queso fresco on top. Optional topping is chile powder mixed in with fresh lime. I sort of understand April's feelings, but these recipes need to be Americanized so that viewers can attempt them at home. Not many of us have the opportunity to travel to mexico.

If April was ***** a know-it-all, she would not have made an obvious grammar mistake. A lot. A lot, it isn't alot. No such word as alot. It is A LOT. So take that and stick it in your menudo. Mexican Made Easy . End of story. The title of the show says it all. Another point, she stated this was something she had in BAJA. April, you ever eat street food in Baja? I have. I live there for four years. I have had this dish many times, just the way she made it. AND THE ONLY REASON SHE MENTIONED FETA IS BECAUSE SOME PARTS OF THIS COUNTRY DO NOT SELL QUESO FRESCO OR COJITA FOR THAT MATTER. So clean the papas fritas out of your brain April and have some class.

SUPER FLAVORFUL!! I mix it up, add the spices to the top, a slice of lime and serve in a coffee cup. This recipe has become a HIT with my family and friends. I made a gigantic batch and took it camping and reheated it to put on breakfast burrito's. I didn't have one kernel left. We've made it so much we've started adding extra ingredients to change it up, such as red pepper or onion or cilantro... I have always added an extra spice to it "Tajin" a Mexican spice easily found in any Mexican store, made from chile & lime. My friends and co-workers are also making this now. It was the first recipe I tried of Marcela's and since then I just keep trying her foods - I THINK HER RECIPES ARE GREAT!

When I was younger there used to be a Mexican guy who would driver around the neighborhood selling this stuff from a van for around a buck. He used the same exact ingredients... same with the vendors in Chicago's Little Village. I love love love this as a snack because its so easy to make! When I'd get really desperate for this here's what I'd use as ingredients which most people have at home: drained can of sweet corn, mayo or sour cream, and grated parm. cheese sprinkled with red pepper. Ok, her recipe is MUCH MUCH better but I'm just saying for anyone that wants to make it even easier. Love the show Marcela!
