Delicious, quick and easy to make pesto which was relatively inexpensive. This pesto would be good on other things as well as the shrimp. My family loved it and I will make it again.

This was wonderfully refreshing, bright, and extremely flavorful!! Loved this recipe!! Now, to address GooGoo and Robin's issues about the cost - get over it! If this is going to work as a review of RECIPES, then your rants about the COST screwed up the ratings so that others who are looking for a really good recipe might believe this one is not one of the best in this category. The premise of the show was most likely forced on her by the network - which is not her fault, but also, it IS possible, if you shop diligently to stock up on items when on sale, thus bringing down the overall cost. Doesn't take a math-whiz either.

My family loved this dish! My husband and I make fresh pesto all the time and this is the best tasting and flavorful one we have ever made. My daughter and I are not a fan of shrimp so we doubled the pesto recipe and used half on the shrimp and half on chicken breasts. This pesto recipe will be our "go to" for now on!

Googooeyes22...What you need to consider is that, when you buy a ingredient to make a dish, you don't necessarily use all of it. For instance, you bought a box of butter with four sticks, but only used two.

Melissa, absolutely delicious! I love shrimp with cilantro and have been looking for a tasty recipe.

    Melissa,

    Your food always looks delicious.

HOWEVER, (and I mean a very big however the prices you quote for what you are using are rediculous ! I mean today you made a nutella filled cookie that looked amazing. You said the whole thing cost you $5 dollars. I just bought a small jar of nutella it was $5.99 not to mention the cream cheese which is $ 2.49 and the butter which was another $2..49. So by my calculations (and anyone else's calculations that are honest you already hit ten bucks without even serving the entree.

I think it would be more realistic if it were $20 with endless possibilites.

Robin, Some people can not afford food now days, and they need someone to show them they can eat nutriously with less money. We are STRAPPED for Money now days. I can purchase these items Lime .50, Cilantro 1.00, Pecan, that amount .50, Shrimp 1 lb $6.00, all the other ingredients you should have on hand. Total $8.00 , now I have enough to buy $1.00, 1lb Pasta. To go with. And $1.00 Steam Vege bag. and there $10.00 Whole meal. Look for Sales, Coupons, Store Specials, BOGO, and Surplus Stores. Meats alternate in the stores weekly with sales. PLAN Ahead. Not on sale, then don't get it. Shop every week and watch the flyers. You can cook a meal on Ten dollars, You can even Cook on Ten dollars a day if you really get some deals and learn to use leftovers the next day. I always watch for shrimp sales, and get meats on the last store date, and freeze as soon as I get home. Buy fresh vegies in season. You can get ground chicken at 1.99 a lb, instead of hamburger. Think out of the box girl and give Melissa a break. Don't forget these receipes are your starting point. You can add your own kicks, I like spicy so I would kick this up with hot chile oil. You can add things to your own liking. Be adventurous, that's what cooking is about. Have fun and stop complaining. Yeah it would be nice if Melissa could spend 100 dollars on a fancy meal, Maybe they'll give her another show that will cover that. But right now we are enjoying what she has to offer, and I appreciate her for that. Fixed income and surviving with fun and good food. :

This looked very good on tv. I have never made my own pesto before and was excited to try it. While this was a very easy and quick meal, it wasn't my favorite. Other shrimp recipes have more flavor.

This pesto has become a staple in our fridge to put on anything and everything. My hubby skips the mayo on his sandwiches and uses this pesto sauce instead for a super kick of flavor. We have this yummy pesto shrimp about once a week now. Thanks for such a quick, but looks oh-so-fancy, main course!

We tossed the shrimp and pesto with whole wheat spaghetti. It was a hit with a toddler, preschooler, hubby and I. We will certainly make this again. It was super economical for us too since I got the shrimp at Whole Foods one day B1G1 sale ($6.50/lb and I grow my own green onions in the kitchen like Melissa has suggested. Cilantro can be found for 50c a bunch at both the Indian and Latino grocery stores around us as well. It is really the tips that Melissa gives during the show that makes the meals economical, not the recipe themselves.

Thanks for another tasty meal, Melissa!

Made this last night for dinner along with the quinoa and lentil salad...both were fantastic. Perfect light dinner for a summer night. The only thing I changed was to roast the shrimp in the oven (400 for 9 minutes so I didn't have to stand over the stove. Will definintely make this again and again. Could see it being a great appetizer with the pesto as a dip.
