I made this as a side dish to go with the Picnic Burritos, and it was delicious! To give it more flavor, I used chicken broth instead of water. I also used pepper jack cheese instead of montery jack cheese to give it a little "kick." Our family will definitely enjoy this dish again and again!!

This was easy to make. Ok out of the oven while hot. But as it cooled as our meal progressed, it tasted extremely bland. I added a touch of ancho to spice it up a bit during the cooking process. Maybe cooked in chicken broth rather than water would have helped? I might make again with some adjustments.

LOVE IT! Not necessary to thaw the corn first if you use frozen. Also used canned green chiles and it tasted great. Great side dish to the Food Network kitchen's chicken fajita recipe.

This was very good. I only had brown rice and colby-monterey jack cheese on hand and it was still amazing! Really easy to make, not a lot of ingredients, but a TON of flavor! I think the kosher salt and the onion give it a ton of flavor and when you add in the poblanos....mmmm yum! My favorite part was the sour cream on top, so good! Thanks for an easy side dish!

I just made this and I added some shredded chicken and some lime zest with the juice of one lime...................oh my gosh this is sooooooooooo good! I will make this again FOR SURE!

I grew up eating my "abuelitas" food and watching you share your mother's receipes is AMAZING to me...thank you and thanks to Food Network for "representing" the simplicity and BEAUTY of traditional mexican dishes the kind that want you coming back for more and the kind that remind you of home and of your "abuelita".
