    was sidetracked when watching it, but this looked delicious. I thought that they said they used a "tamale" to bind it (instead of breadcrumbs boy was I wrong...I think. That stills sounds like a good idea?

    Dear Megan:
    I researched on your question and here is the answer. Hope it can help. Tomalley is the green substance which acts as the liver and pancreas of a lobster. Lobsters have an open circulatory system, which means that their body cavities are bathed by a continuous wash of blood and interstitial fluid, and the tomalley, along with other organs, floats in the body cavity. In addition to being vital to a lobster's well-being, tomalley is also a culinary delicacy; in fact, the term ?tomalley? usually specifically refers to the liver and pancreas of a lobster which has been cooked.
