I'm always looking for more recipes to incorporate beans so I greatly appreciated Marcela's dedicating the entire episode to "pot beans." The previous tip about heating the tortillas (I used the microwave was much appreciated. I also loved how simple the preparation was for this dish. I made this for Sunday breakfast so stuffed with scrambled eggs in addition to the cheese. Once the beans were cooked it couldn't have been simpler. Hope purists will forgive me for using black beans instead of pintos!

I made this tonight for the first time. I read that some people thought it was bland, so I made two changes. First, I substituted a small can of salsa verde for an equal amount of the water, and then I used Pepper Jack cheese instead of plain jack. It was wonderful. The beans are super flavorful.

Good but surprisingly bland. The whole family enjoyed this dish, but I would make substantial changes if I ever made it again. I would add more spices and cut the amount of beans and broth. I had almost half the bean sauce left over.

Great way to use up left over beans, and my boyfriend loves this recipe. I have even done it layered like a lasagna which is easier and good, but of course the original is the best. I have tried it with cheddar but munster or jack is the way to go.

Try diping the tortillas in hot oil before dipping them in beans, then roll them like you would an enchilada, line them up in a cassarole dish, heat to melt the cheese,any kind you like. This is the way our mexican grandmother would make them for us,and we still make them today.

Delish! I only had mini-corn tortillas on hand, so I double the quantity and used those. Had a several cups of bean sauce left over, and plan to use them for bean dip and to make additional "enfrijoladas" later this week. Agree with others that the same thing can be achieved by mashing the beans or using a hand mixer. Will be making this again, excited to try it with different types of bean. Don't heat your tortillas beforehand, just make sure your bean mixture is hot enough, and immerse them completely, flipping a couple times if necessary.
