I'm going to use mini trifle dishes (tea party size leave out the whipped cream in the pumpkin and layer it - gingersnap cookie crumble (with a bit of butter, white chocolate ganache (made w/butter and cream pumpkin layer and sprinkle it with two halves of a cookie and sprinkled with chopped up ginger chews. It will be beautiful and festive for a holiday party! Thanks so much for the inspiration!

I'm sorry but I hated this. The white chocolate ruined it for me. I'd rather just make a pumpkin pie filling and use that. The star is only because I had to give a rating. Sorry.

I made this for a dinner party with friends, and they absolutely loved it. The only thing I did differently was that I didn't have brandy, so I used Butterscotch Schnapps. YUM!!!! This is definitely a keep recipe.

I agree with others that this is more suitable for 4 servings. It was too much like whip cream with a hint of pumpkin for me, so in the future I will likely add much more pumpkin to the recipe. The gingersnaps make a nice crust and topping for this dish adding a needed crunch and depth.

I agree with other reviewers, in that this does not make as much as you'd think. I used mini-trifle dishes, and it fills 4. In the recipe, they do a light dusting of the gingersnap crumbs in the parfait glasses, but I made a small 'crust' at the bottom of the cups instead, which was satisfying. Not sure if this is supposed to be a mousse? To me, it seems in between pumpkin whipped cream and mousse. The flavor is good, and I've made it twice so far. My son loved it so much, he made it, as well.

i made this the other night, and it was absolutely delicious! i used smaller dessert dishes (since i didn't have any parfait glasses as pictured in the recipe, so i can't speak to the recipe not yielding enough, but the flavor was incredible! definitely a keeper.
