Like the others that had tried this, I also had added extra sour cream, philly cream cheese, and milk. I also added a little more spices. If I didn't do all of the little changes, it would have been a bit more bland and dry. My family loved it, so I will definitely make it again.

I added shrimp to the dish to make it a whole meal. I added more cheese and sour cream and it turned out pretty creamy. I skipped the hot sauce & cauliflower. Very good & easy recipe.

We skipped the veggies and added some ham. Its good but a bit dry. Like the other ideas of adding different cheese and a little milk!

I skipped the broccoli and doubled up on cauliflower. I thought it was pretty damn good, nothing spectacular but surely tasty and filling.

Upon first reading this recipe, I concluded that it may come out dry. I was right according to the reviews. I used "ruffles" pasta and a 4-cheese blend instead of all cheddar. I also added a little cream cheese to add some "creaminess" along with some parmesan. I added some milk to the mixture and then covered the dish while it baked. Not at all dry but nice and creamy!

I also thought it was too dry, so, since we've already done in our diet, I added about 1/4 cup heavy cream. Helped a lot! Since I'm not a great fan of broccoli I substituted frozen peas and corn, added some diced mild chillis and about 1/4 cup of diced red pepper (I made it the first time exactly like the recipe, then tweeked. Next time I'm going to use half and half cheddar and jarlsburg cheeses. Might make the taste a little milder.

I agree with one reviewer about it being dry. No offense to Rachel but I nearly always have to "tweak" her recipes. Mac & cheese is one dish I do not make often due to avoiding "carbs." Even my 16 year old son only eats it rarely.
I like adding cream cheese and some parm-reggiano and a bit of skim milk so it is creamier, especially to this one since it is baked.
Baking almost always makes it drier. Other than that is is a nice way to get some veggies in.

I used low fat sour cream but added some velveeta. Used low carb pasta and no one ever knows the difference.
Creamy, tangy, and kids actually ate!
